Chicken and broccoli bake

Chicken and broccoli bake –

Serves 2 –

You will need

1 can of chicken in white wine

1 head of broccoli

½ an onion

day old loaf

50g of butter or 2 tablespoons of oil

½ teaspoon of mixed herbs

Salt and black pepper Preheat your oven to 160

Chop the onion and broccoli, put the broccoli in a pan of boiling water and cook until tender. Put the butter in a frying pan on a medium heat and cook until soft.

Add the chicken in white sauce to the onions (don’t be put off by the chicken when you open the tin, this is normal…see picture). Add a pinch of salt and black pepper and the mixed herbs.

Drain the broccoli and add to the mix and stir well, tip the mixture into an oven dish/tin.

Using half the bread, slice and tear out the centre, keep the crusts for croutons. Chop the bread into small pieces or blitz in a food processor if you have one. You are aiming for breadcrumbs.

Sprinkle these onto the chicken mix and place in the oven until the breadcrumbs brown on top and the mix is bubbling.

Serve with the remaining bread or cooked new potatoes.

Alternative serving ideas- top with pastry  before baking for a delicious pie or top with sliced or mashed potatoes.

½ pack of pasta

I can chicken in white sauce

A handful of mushrooms

½ and onion

2 cloves of garlic (optional)

50 g butter

Salt and black pepper

Tip ½ a pack of pasta into a large pan of boiling water.

Chop the onions and slice the mushrooms. Melt the butter in a large frying pan and fry the onions and garlic if using until soft. Add the mushrooms and fry until cooked.

Add the chicken in white sauce stir well over a medium heat. Add a pinch of salt and black pepper. Drain the pasta and return to the pan, add the chicken and mushroom mixture and stir. Serve with garlic bread.
